Soumei Tea
Shoumei, sold on this site as Soumei, is the most mature leaf white tea makes, and the most underrated. Big leaves with stems produce a tea that is sweet, thick and unpretentious, and its ability to age into a dark, cane-sugar liquor makes it the quiet favourite of many long-time drinkers who no longer need the prestige of Silver Needle.
Where it comes from
Shoumei is produced right across Fujian's white tea region, but the volume and the best value concentrate in Fuding and Zhenghe. Mature leaf is cheaper to grow and process, which keeps the price honest. That does not make it low quality. The same bushes that give Silver Needle in spring give Shoumei later, and the older leaves carry their own depth of flavour.
How it is made
The leaves are withered and dried in the same unhurried way, then often pressed or left loose for aging. A good Shoumei tastes sweet because of how the large leaf dries slowly, not because of added anything. Look for clean, steady sweetness and no harshness; the leaf size means bitter notes are a real risk in cheap, rushed lots, so the drying matters more than the region.
What the vintage tells you
Young Shoumei is mild and slightly grassy. From about three years it turns soft and hay-like, and past seven or eight it develops that unmistakable sugarcane or dried-dates sweetness that age gives large-leaf white tea. A well-stored 2015 Shoumei is a wonderful everyday aged white, and one of the best bargains in the shop when you compare it with aged cakes of finer grades.
How to brew it
This is a forgiving tea. Use 5 grams per 150 ml at 90–95°C, or simply throw a spoonful in a thermos and forget it. First steep fifteen seconds, then add time freely. Shoumei takes long steeps and re-boiled water without turning bitter, which makes it the easiest white tea to brew well by accident.
