White Peony Tea
White Peony sits one step down the bud-to-leaf ladder from Silver Needle, and that small difference changes the whole character of the tea. You get one bud with one or two young leaves, so the cup carries more body, a little more green, and a far friendlier price. For most daily drinkers, White Peony is the white tea to actually live with.
Where it comes from
The same Fujian map as Silver Needle applies: Fuding first, Zhenghe second, then Zherong and Songxi. Fuding peony is rounder and sweeter; Zhenghe peony leans floral and a little more structured. The older the bush, the thicker the leaves, and old-bush peony can show a surprising depth that belies its humble position in the grade order.
How it is made
Withering does the real work. Leaves are spread thin and left to lose moisture slowly, sometimes with a few hours of sun to start, before being dried. Because the leaf is larger than a bud, makers pay attention to even drying; a rushed batch turns grassy, while a patient one keeps that clean, melon-like sweetness. Peony is usually sold loose in the first year or two, and many houses press it into cakes to age.
What the vintage tells you
Fresh peony is bright, almost vegetal, with a honeyed edge. Around three to five years the grassiness falls away and dried-fruit notes arrive, which is why pressed peony cakes are bought for aging. After eight or more years you are drinking something closer to an aged white: thicker, darker liquor and a sweet, cooling aftertaste. If you want an easy entry to aged white without the price tag of old Silver Needle, aged peony is the sensible choice.
How to brew it
Start with 4–5 grams per 150 ml at 85–90°C. White Peony is forgiving: ten to fifteen seconds on the first steep, then build slowly. It holds up to seven or eight steeps and takes cooler water better than most teas, so it is a good candidate for a large pot and a long afternoon.
